Ingredients:

• 3 tbsp – Sugar
• 350 ml – red wine
• 250 ml – Cream
• 300 gms – dark coating chocolate, chopped
• 200 gms – sponge fingers (available in gourmet stores)
• 150 gms – whole strawberries
• 100 gms – strawberries, for garnishing

Method:

  1. Put the red wine and sugar in a pan and bring it to a boil over low heat at about 80 degrees C.
  2. Add 150 gms of the strawberries to the red wine and poach gently on low heat for about 5 minutes. Remove from heat and set it aside to cool.
  3. In another pan, boil the cream with the chocolate until it has melted. Set aside to cool.
  4. Layer individual serving glasses with sponge fingers, poached strawberries, a dollop of the chocolate cream and repeat.
  5. Top with the remaining strawberries and serve chilled.
