Ingredients:
• 3 tbsp – Sugar
• 350 ml – red wine
• 250 ml – Cream
• 300 gms – dark coating chocolate, chopped
• 200 gms – sponge fingers (available in gourmet stores)
• 150 gms – whole strawberries
• 100 gms – strawberries, for garnishing
Method:
- Put the red wine and sugar in a pan and bring it to a boil over low heat at about 80 degrees C.
- Add 150 gms of the strawberries to the red wine and poach gently on low heat for about 5 minutes. Remove from heat and set it aside to cool.
- In another pan, boil the cream with the chocolate until it has melted. Set aside to cool.
- Layer individual serving glasses with sponge fingers, poached strawberries, a dollop of the chocolate cream and repeat.
- Top with the remaining strawberries and serve chilled.
