Ingredients:

• 750 g Brinjals
• 1 tbsp Olive oil
• For stuffing:
• 1 Onion chopped
• 1 tbsp Olive oil
• 200 g minced lamb Meat
• 1 tsp cumin
• 1 tsp allspice
• salt and pepper to taste
• 2 tbsp – Pine Nuts
• For the sauce:
• 1.5 cups hot water
• 75 g Tomato paste
• 1/2 tsp – white pepper
• 1/2 tsp – black
• pepper

Method:

  1. Preheat the oven to 200 C.
  2. Slice brinjals into 4, leaving the neck intact.
  3. Heat some oil in a pan and fry the brinjals until it turns into light brown in color, then lift out and set aside.
  4. Prepare the stuffing:
  5. Heat olive oil in the same pan, add the onions and fry them until brown.
  6. Add the minced meat, season with the cumin, all spice, salt and pepper then add the pine nuts.
  7. Fill brinjals with the meat and onion mixture.
  8. Place them in an ovenproof pot or dish.
  9. Heat water in a separate pot and add the tomato paste.
  10. Let it boil and carefully pour it over the stuffed brinjals.
  11. Season with salt and both peppers.
  12. Top each brinjal with a slice of tomato, then place in the oven for 25 minutes until they are just tender but not soft.
