Ingredients:
• 4 cups – watermelon, cubed
• 2 cups – fresh lychees, peeled
• 1/2 cup – Sugar
• 1/3 cup – water
• 2 cm piece – Ginger
• 3 tbsp – Almonds
• Vanilla ice Cream to serve
Method:
- Mix sugar with water. Peel and cut ginger into thin strips and add to the sugar.
- Heat the mixture and stir till the sugar dissolves.
- Simmer without stirring for 3 – 4 minutes.
- Remove from heat and cool the syrup.
- Soak almonds in hot water, peel and shred thinly.
- Cut each lychee into half and discard the seeds.
- Mix them with watermelon cubes.
- Pour the cooled sugar syrup on the fruits, toss well and chill in refrigerator for at least an hour.
- To serve, place some fruit mixture with syrup in individual bowls.
- Sprinkle with almonds and top with a scoop of vanilla ice cream.
