Ingredients:
• 5 pieces – ripe Jackfruit (arils), deseeded
• 4 – eggs
• 2.5 cups – flour
• 1.75 cups – Sugar
• 220 g – Butter
• 1.5 tsp – baking powder
• 1 tsp – Lime juice
• 1 pinch – salt
Method:
- Sieve flour and baking powder together.
- Separate egg yolks and white, beat the egg whites till stiff.
- In a mixing bowl, mix together butter and sugar.
- Add egg yolks, salt and lime juice.
- To the above mixture add alternately flour and egg whites and mix using an electric hand mixer.
- Chop jackfruit into fine pieces and add to the above batter. Mix well.
- Meanwhile, preheat oven to 180 degrees.
- Pour the batter into a large greased pan and bake for 50 mins.
