Ingredients:

• 2 – medium-sized Ridge gourd
• 1 – Onion
• 1 lb – Prawns
• 1/2 tsp – Red Chilli powder
• 1/2 tsp- dhaniya powder
• 1/4 tsp – Turmeric powder
• 4-5 tsp – Coconut paste/milk
• 1-2 tsp – oil
• salt
• For seasoning:
• 1 tsp – mustard
• 1 tsp – Urad Dal
• Curry leaves

Method:

  1. Peel the ridge gourd and cut it into small pieces.
  2. Pressure cook it for about a whistle with 1/2 cup of water. You can also microwave it.
  3. Wash the prawns thoroughly, add some turmeric and salt to it and keep it aside.
  4. Heat the oil in a pan, add mustard seeds and urad dal. After the mustard pops, add the onions to it and fry it till becomes soft and translucent.
  5. Now wash the prawns once again with water and dry it well to drain all the water.
  6. Add it to the onions and fry well till the aroma is released.
  7. Now add the cooked ridge gourd, chilli powder, dhaniya powder, salt, 1/2 cup of water. Stir well and close it with a lid.
  8. Open the lid after 3 minutes and add the coconut milk to it. Stir it well for about 5 minutes and turn off the stove.
  9. Garnish with coriander Leaves and serve it with hot rice or chapattis.
