
Ingredients:
• 3 – wadis
• 4 – Potatoes
• 2 – Brinjals
• 3 – Tomatoes
• 2 – Onions
• 1 tsp – cumin powder
• 1.5 tsp – coriander powder
• 1 tsp – Red Chilli powder
• 1/2 tsp – Turmeric powder
• Coriander leaves – few sprigs
• Oil – 3 tbsp
• Water as required
• Salt to taste
Method:
- Heat oil in a thick bottom pan. Fry onions until brown, add in wadis and fry well.
- Add potatoes and saute, add tomatoes, brinjals and all dry masalas.
- Fry until well done.
- Now add water enough for the gravy and salt.
- Cover and cook the vegetable until wadis and potatoes are well done. Check for salt.
- Serve garnished with chopped coriander.
