Ingredients:

• 1 kg – Large Prawns
• 115 gms – Butter
• 100 gms – Onions
• 225 gms – Rice
• 115 gms – Grated cheese
• 2 litres – Stock
• Salt and pepper to taste

Method:

  1. Melt 60 gms butter.
  2. Add chopped onions and cook till it starts to change colour.
  3. Add washed and drained rice and fry for a couple of minutes.
  4. Add stock a little a time and cook rice.
  5. Melt 50 gms. butter, add boiled prawns. Saute.
  6. Add to rice.
  7. Add melted butter and grated cheese. Mix well.
  8. Check for seasoning.
