Ingredients:
• 1.5 cups – Rice
• 3 cups – Water
• 4 – Brinjals (round violet medium size)
• 2 – Green chillies (cut in length)
• 1 – Onion (large finely chopped)
• 1 tsp – Jeera
• 1/2 tsp – Turmeric
• 1/2 tsp – Garam Masala
• 1/2 tsp – Red Chilly powder
• Salt to taste
• 1/2 cup – Oil
Method:
- Cut brinjals into four pieces and put them in salt water.
- Wash rice and soak.
- Heat oil in a pressure pan.
- Add jeera, onions and saute.
- Now add brinjals, salt, turmeric powder, green chillies.
- Fry till brinjals become a bit soft.
- Add garam masala, chilly powder.
- Add rice and fry for further 2 mins.
- Add 3 cups of water and close lid.
- After two whistles put off the flame.
- Now serve it.
