
Ingredients:
• 1 – Drumstick
• 1 – Potato
• 1- Carrot
• 1 cup – peas/beans
• 2 – small Onions
• 7 Cloves – Garlic
• 1/2 cup thick – Coconut Milk
• 2 tbsp – Tamarind juice extracted
• 1 tsp – Turmeric powder
• 1 tsp – Garam Masala
• 1 tsp – chilli powder
• 1 tsp – coriander powder
• 1 tbsp – oil
• Cumin seeds, a pinch
• 1/2 tsp – mustard seems
• 10 – Curry leaves
• Coriander leaves to garnish
• Salt to taste
Method:
- Heat oil in a kadai, add mustard seeds, leave it to splutter.
- Then add cumin seeds, curry leaves, onions, garlic and saute till it is fried well.
- Add the vegetables and fry for 3-5 mins.
- Add salt, turmeric powder, chilli and coriander powder.
- Add water, let all the ingredients combine and leave it till all the vegetables get cooked.
- Now add extracted tamarind juice and allow it to boil well till raw smell of tamarind goes and vegetables are soft.
- Add garam masala, coconut milk and cook on low heat for 3-5mins.
- Garnish with Coriander leaves.
