
Ingredients:
• 4 cups – mixed berries (strawberry, mulberry, raspberry, blueberry)
• 2 tbsp – Orange juice
• 1 cup – Sugar
• 1.25 cup – water
Method:
- Boil sugar with water, till it starts boiling.
- Reduce heat and simmer for 2-3 minutes.
- Keep aside to cool, to room temperature.
- Run cleaned berries in a mixie, with orange juice, till smooth.
- Sieve if required.
- Add cooled sugar syrup and mix with a spoon.
- Set the mixture in a lidded container in freezer, till softly set.
- Remove from freezer, beat till smooth, but do not allow to melt.
- Return to container and refreeze.
- Beat again and return to freezer, till well set.
- Serve in scoops, garnished with sprigs of mint and slices of star fruit or kiwifruit.
