Ingredients:

• 1/4 kg – Tomato
• 1/4 kg – small Onion
• 1/4 kg – Potato
• 8 – Green chillies
• Turmeric powder, a pinch
• salt to taste
• For Grinding:
• 3/4 cup – grated Coconut
• For Seasoning:
• 2 tsp – Ghee
• 1 tsp – Mustard Seeds
• Curry leaves, a few

Method:

  1. Peel the onion skin and cut each onions to 2 or 3 pieces.
  2. Cook the potatoes and peel the skin and mash them.
  3. Finely chop the tomatoes and green chillies.
  4. Grind the coconut to a fine paste.
  5. Heat ghee in a pan, add the mustard seeds.
  6. When the mustard seeds sputter, add the curry leaves, chopped onions and green chillies and fry till the onion becomes transparent.
  7. Add the tomatoes and let it fry for some time.
  8. Now add the potatoes, a pinch of turmeric and salt.
  9. When the mixture starts boiling, add the ground coconut and let it boil for a minute.
  10. Sodhi is now ready to serve with plain rice.
