Ingredients:
• 1 can – white bean soup (medium can)
• 1 cup – red and green bell pepper pieces
• 1 cup – Corn kernels
• 1 – Onion (chopped)
• 2 – Garlic Cloves (crushed)
• Olive oil as needed
• 2 tsp – Corn flour
• 3 cups – vegetable broth
• salt as needed
• pepper powder as per taste
• 1 tbsp – Parsley leaves (chopped)
Method:
- Heat enough olive oil and saute the chopped onions and crushed garlic cloves until the onions turn translucent.
- Drain the canned white beans, add the chopped bell peppers and corn kernels to the sauteed onions and cook for few minutes.
- Immediately add the white beans and stir for a few seconds. Add the vegetable broth with enough salt and pepper powder.
- Bring everything to boil and put to simmer. Cook until the vegetables are well done.
- Make a thin white sauce with the corn flour and water.
- Add the sauce and parsley leaves to the soup and cook until the soup thickens.
