Ingredients:
• 500g – Potatoes
• 3 Capsicums
• 375g – Onions
• 2 Cloves Garlic (chopped)
• 1 small white marrow
• 3 Tomatoes
• 2 tbsp – Ghee
• 1 cup – salad oil
• Salt and pepper to taste
• 4 fried eggs
Method:
- Peel the potatoes, onions, marrow and tomatoes. Remove the seeds from the capsicums and slice all the vegetables thinly.
- Melt the ghee in a frying pan. Add the oil, vegetables, garlic, salt and pepper.
- Mix well. Cover and cook for 15 mins. Remove the lid and cook for another 30 mins. Add water if needed.
- Pour this stew in a serving bowl and top with the fried eggs. Serve with boiled rice.
