Ingredients:
• 2 – large Potatoes diced into medium-sized cubes
• 2 – large Onions
• 3 tbsp – besan
• Turmeric powder – 1/2 tsp
• 1/2 inch piece – Ginger chopped fine
• Green chillies – 4 slit into quarters
• Curry leaves (optional)
• Salt to taste
• Seasoning:
• 3 tsp – cooking oil
• 1 tbsp – Urad Dal
Method:
- Add enough water to the besan to make a smooth paste.
- Add 2 pinches of turmeric and set aside.
- Make seasoning with oil and urad dal in a pan.
- Add ginger, chillies and curry leaves and toss for a minute.
- Add the potato and onion pieces and add salt.
- Now add minimum water to cook.
- Cover with a lid and let simmer till ‘almost’ done.
- At this point add the besan paste. Mix gently. Besan should form a gravy like consistency in the pan.
- If required add more water or besan paste to get the desired consistency. Sit gently for a while and then serve.
