
Ingredients:
• Okhra/Bhindi/Ladies Finger – 100 grams
• Greek Yoghurt – 250 grams
• Green chillies – 4 nos
• Onion – 1 medium
• Mustard Seeds – ½ tsp
• Oil – 5 tbsp
• Salt to taste
• Dried red chilli – 2 nos
Method:
- Cut the okhra into very fine roundels. (The thinner the better)
- Finely chop onions and green chillies.
- Whisk the yoghurt to a smooth consistency.
- Heat 4 tbsp oil in a non-stick pan.
- Add okhra roundels and on low-flame fry till crispy. This may take upto 5-8 minutes.
- In a separate pan heat the remaining oil, add mustard seeds allow to pop.
- Add the dried red chillies, onion and green chillies sauté till golden brown.
- To the whisked and smooth yoghurt add the above fried ingredients.
- Serve as an accompaniment for various Indian meals and snacks.
