Ingredients:

• 100g – red Pumpkin
• 100g – Sweet Potato
• 100g – Potato
• 100 g – Ash gourd
• 100g – Yam
• 100g – string beans ( karamani, barbathi )
• 100g – Gherkins ( kovakkai, tondli)
• 1 – coconut, large
• 2 tbsp – Rice flour
• 6-8 – Green chillies
• 1/2 tsp – Asafoetida
• Salt, to taste

Method:

  1. Peel and cut pumpkin, sweet potato, potato, ash gourd, yam into thin and long pieces like finger chips.
  2. Cut beans into 2 inch long pieces. Cut gherkins into quarters, lengthwise.
  3. Grate the coconut and extract 1 cup first milk and 3 cups of second milk.
  4. Slit the green chillies.
  5. Combine all the vegetables and chillies with the second coconut extract. Simmer till the vegetables are cooked.
  6. Add salt, and rice flour, mixed with 1/2 cup of water. Simmer for 2-3 minutes. Add the first extract of coconut and asafoetida.
  7. Just as it begins to boil, remove from fire. Serve with steamed rice.
