
Ingredients:
• 1 kg – liver, cut into thin slices
• 2 – onions, chopped
• 1 tsp – chopped Parsley
• 1 tsp – salt
• 2 tsp – pepper powder
• 1 – egg, beaten with a tsp of flour
• 6 – rashers of bacon
• 1 cup – water
• 1 tbsp – oil
Method:
- Wash the liver well, rub it well all over with the salt, pepper and vinegar.
- Place it in a big baking pan.
- Add the potatoes, onions, red chillies, cinnamon, cloves and sufficient water.
- Cover with aluminium foil and bake in a moderate oven for about 1 hour 15 minutes or till the meat is tender.
- Remove the foil and continue roasting till the meat is nice and brown and the potatoes too are roasted well.
- Serve hot or cold with bread or with spiced rice.
