Ingredients:

• 1 cup – cooked Rice
• 2 tbsp – oil/ghee
• 2 tbsp – coarsely crushed black pepper
• 2 tsp – black gram dal and Channa dal
• 1 tsp – Mustard Seeds
• 8-10 – Curry leaves
• 8-10 – Cashew nuts
• 1/2 tsp – Hing powder
• 1 tbsp – fresh Coconut
• 1tbsp – fresh coriander
• salt

Method:

  1. In a heavy bottomed wok/ kadai/pan, heat the oil.
  2. When the oil is hot, add hing, mustard, urad dal, channa dal, curry leaves and cashew nuts. Fry for a minute or so.
  3. Keep 1/4 tsp for garnishing and add the rest of the crushed black pepper and fry it for just a few seconds.
  4. Add the cooked rice and mix it thoroughly, without crushing the rice. Add salt and mix.
  5. Decorate with fresh coconut and coriander and serve with pappads or raita.
