Ingredients:

• 4 to 5 – ripe Tomatoes
• 50 g – grated Carrot
• 50 g – grated Cabbage
• 50 g – grated Capsicum
• Salt as per taste
• 1/4 tsp – Turmeric powder
• 1 tsp – coriander powder
• 1 tsp – Red Chilli powder
• 1 tsp – kitchen king masala
• 1 cup – Coriander leaves
• oil for cooking

Method:

  1. For the stuffing:
  2. Heat 1 tsp oil in a pan. Add the grated vegetables, spices and salt
  3. Mix well. Cover it and allow the vegetables to cook.
  4. Remove the top of tomatoes.
  5. Scoop out the seeds.
  6. Stuff the tomatoes with the vegetables.
  7. Heat 2 tsp oil in a pan. Place the stuffed tomatoes.
  8. Cover and cook till the tomatoes are tender.
  9. Decorate with coriander leaves.
  10. Serve with rice.
