
Ingredients:
• ripe but firm Mango – 350 gm
• Vinegar – 3 tbsp
• Sugar – 3 tbsp
• chilli flakes – 1 tsp
• chopped Coriander leaves – 2 tbsp
• chopped Peanuts – 2 tbsp
• salt to taste
Method:
- Peel the mango and cut into one and a half cm cubes.
- In a small sauce pan, combine vinegar, sugar and salt and chilli flakes.
- Bring to a boil, simmer for 1 minute.
- Remove from fire.
- Allow to cool.
- Pour the dressing on mango pieces.
- Add coriander leaves and peanuts.
- Toss well and serve.
