
Ingredients:
• 4 – medium bell peppers
• 1/4 kg – minced Meat
• 1 – medium finely chopped, Onion
• 1 – medium size potato, cut in small cubes
• 1 – carrot, cubed
• 2 – green chillies, chopped
• 1/2 bunch – Coriander leaves
• 1/4 cup – Mint leaves
• 1/4 tsp – Red Chilli powder
• 1/4 tsp – Turmeric powder
• 1/4 tsp – cumin powder
• 1/4 tsp – pepper powder
• 1 tbsp – Vinegar
• Salt to taste
• Oil
• 2 tbsp – Butter
• 1 m thread.
Method:
- Heat oil and fry the onions till pink.
- Add the chillies and powdered spices and fry well.
- Add the potatoes and carrots, and cook for 5 mins and toss a few times.
- Add the mince and salt, and cook covered on low heat until the meat and vegetables are done.
- Finally, add the chopped coriander leaves and vinegar, toss well and cook covered for a minute, to dry out excess water.
- Empty the seeds of the capsicum by slicing the top portion.
- Apply butter on both surfaces.
- Fill them equally with the mince and cover with the sliced portion and tie with a thread to secure the lid in place.
- Grease a pan and shallow fry the stuffed bell-peppers, sprinkling some salt on them.
- Cover and cook till they are soft. Don’t overcook.
- Cut off the threads and serve hot as an appetizer.
