Ingredients:

• 2 cups – Coconut Milk (freshly made, or canned)
• 1 cup – red lentils, washed until water runs clear
• 1 – onions, finely chopped
• 2-3 Cloves – Garlic
• 1 inch piece – Lemon grass, chopped into thin slices
• 1 tsp – cumin coriander powder
• 1 tsp – paprika (or as per taste)
• 1 – Lemon
• 3 – scallions
• Salt and pepper to taste
• Few sprigs of Cilantro for garnish

Method:

  1. In a saucepan, in 1/2 tsp oil, saute onions, garlic and lemon grass until soft.
  2. Add the lentils along with all the spices. Add the coconut milk, 2 cups water (add more to suit your consistency) bring to a boil and then simmer covered until soft and mushy
  3. Add the juice of lemon, scallions, salt, pepper.
  4. Serve warm garnished with scallions, paprika and cilantro.
