Ingredients:
• Basmati Rice – 1 cup
• Carrot – 1/2 kg
• Onion – 2, large
• Red Chilli – 4
• Coriander seeds – 1.5 tsp
• Jeera – 3/4 tsp
• Peanut – 2 tbsp
• Coconut – 2 tbsp, scraped
• 1 – Cinnamon stick
• 2-3 – Cloves
Method:
- Cook the rice separately and keep aside.
- Scrape the carrots and dice the onions.
- Fry the red chillies, coriander seeds and jeera and 2 tbsp scraped coconut in 1 tsp of oil and grind into a fine powder.
- Heat oil, add the cinnamon and cloves and saute until brown.
- Now add the diced onions and cook for 5 minutes.
- Add the scraped carrots and cook until tender. Add salt to taste and the powdered masala.
- Fry for a minute, then add the cooked rice.
- Saute the peanuts in a pan and beat into a coarse powder.
- Garnish the rice with the peanut powder.
