Ingredients:
• Raw Tomatoes – 10 nos (approx. 250 grams)
• Shallots – 50 grams
• Dessicated Coconut1 – 200 grams
• Turmeric powder – ½ tsp
• Green chillies – 6 nos
• Mustard Seeds – 1 tsp
• Salt – to taste
• Curry leaves – 2 sprigs
• Coconut2 Oil – 4 tbsp
Method:
- Wash the tomatoes and dry them up. Chop tomatoes finely.
- Take a handful and squeeze it with-in your palms to drain out excess water.
- Chop shallots and chillies finely.
- In a heavy bottomed non-stick pan, heat oil.
- Add mustard seeds and allow to pop.
- Add all the remaining ingredients, cover with a lid and low flame cook for about 15 mins.
- On removing the lid you will see tomatoes leaving a lot of water.
- Remove the lid, mix well, spread out evenly in the pan, cook for another 20 mins still on low flame, (this process helps in drying the extra water)
- Now your tomato thoran is ready to be served with plain rice.
