Ingredients:

• 4 – 6 – Leg quarters with bones, with or without skin
• 2 tbsp – Chilli paste
• 3 – tbsp- Tandoori paste
• 2 tbsp- Curry paste
• 2 tbsp- Garam Masala
• 3 tbsp- Red Chilli powder
• fresh, ground – Rosemary
• Salt to taste

Method:

  1. Mix the pastes and powders with a 3: 1 lime juice/water ratio in a bowl and add the chicken. Mix well with the masala.
  2. Marinate for 6 -12 hours in the fridge.
  3. Then pre-heat the grill to 450F.
  4. Place chicken on the high rack in the grill for 17-20 mins.
  5. Flip the chicken until second side is golden brown.
  6. Serve hot.
