Ingredients:

• 2.25 cups – wholegrain dried Penne Pasta (you can use any Pasta you like)
• 3-4 cups – cherry tomatoes, halved (or any sweet tomatoes)
• 1 to 1.5 cups – cubed fresh Mozzarella cheese (You can also use Paneer instead)
• 1/4 cup – Olive oil
• 1 tbsp – Balsamic Vinegar
• Zest and juice of 1 large Lemon
• A few fresh Basil leaves, shredded
• Salt and pepper to taste

Method:

  1. Deseed tomatoes if required and chop.
  2. Cook the pasta according to the package instructions until just tender.
  3. Meanwhile, mix together the oil, vinegar, lemon zest and about 1 tbsp lemon juice along with basil leaves.
  4. Season with salt and pepper.
  5. Add the tomatoes and cheese.
  6. Toss it well and let it sit until the pasta is cooked.
  7. Drain the pasta and toss with the tomato mixture.
  8. Serve it immediately garnished with more basil if desired.
  9. Garlic bread as an accompaniment would make this perfect.
