Ingredients:

• 250 g x 2 – suterfeni, with or without Saffron
• 1 cup – paneer, grated
• 1/2 cup – icing sugar, sieved
• 1 tsp – Corn flour
• 1 cup – fresh mango, chopped
• For garnishing:
• few rose petals
• Mango slices

Method:

  1. In a medium-sized bowl, place the paneer, icing sugar and corn flour and mix well.
  2. Add the finely chopped fruits.
  3. Place the suterfeni bands on a lightly greased baking tray and heat in a moderately heated oven, just enough to make it a little crisp.
  4. Remove from the oven and allow to cool slightly.
  5. Place the suterfeni on a serving dish and spread the cottage cheese mixture over this evenly.
  6. Place another suterfeni over the cottage cheese mixture.
  7. Pour sugar syrup over the suterfeni, making sure it does not leak from the sides.
  8. Garnish with the rose petals and fruit slices.
  9. Cut into triangles and serve at room temperature or cold.
