Ingredients:

• 500 g – Paneer
• 3 cups – Tomato puree (diluted with 3 cups water)
• 1/2 cup – Ghee
• 2 tbsp – Onion paste (fried)
• 8 – green Cardamoms (choti elaichi)
• 4 – black Cardamoms (badi elaichi)
• 2 tsp – Turmeric (haldi) powder
• 1 or 2 tsp – chilli powder – (dissolved in 1 cup water)
• 4 – Cinnamon sticks
• 2 tsp – Ginger powder
• 1 tsp – Black cumin seeds (shah jeera)
• 2 tsp – dry Mint
• Garlic water

Method:

  1. Fry the paneer till golden brown. Drop into a bowl of cold water when done.
  2. Leave in the water for about 10 mins. Then discard the water.
  3. In a pan, add the tomato puree, garlic water, green cardamoms, black cardamoms, cinnamon sticks, turmeric powder, ginger powder, onion paste, ghee and red chilli water.
  4. Cook till the mixture is of a sauce-like consistency with the ghee separating from the sauce.
  5. Add the fried paneer. Cook until well blended with the sauce.
  6. Add the dry mint, black cumin seeds and cook for another 5-10 mins.
