
Ingredients:
• eggs – 2, lightly beaten
• large, ripe Tomatoes – 3
• bread slices – 2
• Milk – 4 tbsp
• oil – 2 tbsp
• Garlic – 2 tsp, minced
• Spring onions – 1/2 cup, chopped
• soya sauce – 2 tsp
• Prawns 6, cooked and chopped
• grated cheese – 4 tbsp
• Butter – 2 tsp
• pepper to taste
• salt to taste
Method:
- Cut a thin slice from top of the tomatoes.
- Carefully scoop out the pulp.
- Rub the inside of the tomatoes with little salt and place them cut side down, on a plate.
- Break the bread into tiny pieces and pour milk over it.
- Heat oil in a small fry pan and fry garlic till brown and fragrant.
- Add spring onion and stir fry for few seconds.
- Add Soya sauce and prawns.
- Mix well and remove from fire.
- Let the mixture cool.
- Mash the bread and add to the cooled mixture.
- Add the beaten eggs.
- Add salt and pepper to taste.
- Fill the tomatoes with the egg mixture.
- Place them on a lightly greased baking tray. Sprinkle grated cheese on top.
- Dot with butter and bake in oven (150 degrees centigrade) for about 25 minutes, till the custard is set.
- Serve hot with garlic toast, for a substantial snack.
