
Ingredients:
• 6 – medium Peaches or nectarines, peeled, pitted and sliced
• 3 tbsps – Lemon juice
• 1/2 cup – water
• 3 tbsps – Sugar
• 1 tbsp – cornstarch
• A pinch of ground Cinnamon
• 2 – Cloves
• 1 – banana, sliced
• 1/2 kg – plums, pitted and quartered
• 1 cup – seedless green grapes, halved
• 1.5 cups – Blueberries
Method:
- Toss half of the peaches with 1 tbsp of lemon juice. Set aside.
- In a microwave safe casserole combine remaining sliced peaches, water, and 1 tbsp of lemon juice.
- Cook, covered, on high for 3 to 5 mins or till very tender, stirring twice.
- Do not drain juice in casserole.
- In a blender or food processor, blend peaches and the juice till smooth. Return to casserole.
- In a small mixing bowl, combine sugar, corn-starch, cinnamon and cloves. Add to casserole.
- Cook uncovered on high for 2 to 3 mins or till thickened and bubbly. Stir every 30 secs.
- Cook uncovered on high for 1 min more.
- Cool. Toss banana with remaining lemon juice.
- Layer fruits in a glass bowl, using half of the remaining peaches, all of the plums and all the grapes.
- Alternate bananas and strawberries on top.
- Continue layering remaining peaches and all the blueberries.
- Spoon peach sauce when done layering.
- Chill and serve.
