Ingredients:

• 2- Bitter gourd
• 1 cup- Fresh sweet Curd
• 1/4 cup – Grated Coconut (ground into a paste)
• 2 tbsp – Lemon Juice
• 1 tbsp – Salt
• 1/2 tsp – Sugar
• Salt as per taste
• For seasoning:
• 1 tsp – Urad Dal
• 1/2 tsp – Mustard Seeds
• 1/4 tsp – Hing
• 1-2- Red Chillies (as per your taste)
• Curry leaves – 2-3
• Fresh coriander leaves, chopped finely 1-2 tbsp
• Oil

Method:

  1. Slice the bitter gourd into small pieces and soak in lemon juice and salt for 1 hour.
  2. Wash well and squeeze out the water.
  3. Saute with oil in a non-stick pan until crisp.
  4. Remove and drain on tissue paper.
  5. Add coconut paste to the yoghurt and beat until smooth.
  6. Mix the bitter gourd slices.
  7. Heat oil and season with all the ingredients.
  8. Pour seasoning into the curd along with sugar and salt.
  9. Keep in the fridge.
  10. Serve chilled with rice.
