Ingredients:
• 100 g – fresh white breadcrumbs (made by passing fresh bread through a sieve or fine grater)
• 100 g – grated cheese
• 200 g – finely chopped Peanuts or Walnuts
• 1 tbsp – finely chopped Green chillies
• 1/2 tsp – coriander-cumin powder
• 1 – egg, beaten
• 1/2 cup – boiled peas
• 1 cup – grated Carrots
• 2 – onions, grated
• 1 tbsp – finely chopped Coriander leaves
• 1 cup – Milk
• salt to taste
Method:
- Grease and line a loaf tin.
- Mix together breadcrumbs, nuts, cheese, onions, coriander, chillies, salt, chilli powder, coriander-cumin powder and beaten egg.
- Gradually add enough milk to bind.
- Place in loaf tin and smooth mixture with the back of a spoon.
- Bake in a pre-heated oven for 15-20 mins.
- Remove and arrange peas on top. Press into loaf.
- Return to the oven for 5 mins.
- Remove loaf from tin and serve surrounded with grated carrots.
