Ingredients:

• apples – 2 (350 gm approx)
• golden Raisins – 1/2 cup
• oil – 1/4 cup
• Onion 1, medium size
• Garlic – 6 to 8 flakes
• Cinnamon – 1 stick
• Lemon grass – 1 piece, 5 cm long
• chilli powder – one and a half tsp
• curry powder – one and a half tsp
• Tomato puree – 2 tbsp
• water – 1/4 cup
• Coconut Milk – 1/2 cup
• salt to taste

Method:

  1. Peel and core apples.
  2. Cut into 2 cm cubes.
  3. Grind onion and garlic to a paste with oil.
  4. Heat a non-stick fry pan and fry the ground paste till light brown.
  5. Add chilli powder, curry powder, lemon grass and cinnamon and fry 1 minute.
  6. Add tomato puree, water, apples and raisin.
  7. Add salt to taste.
  8. Cover and cook on low flame till apples are slightly soft.
  9. Add coconut milk and cook for 2 more minutes.
  10. Serve hot with steamed rice.
