
Ingredients:
• 15g – Butter
• 15g – Refined flour
• 150 ml – Milk
• 55g – cheese
• 2 – eggs
• Salt
• A pinch of pepper
Method:
- Melt butter in a pan. Add flour and cook for a few mins.
- Add hot milk and cook till sauce thickens stirring all the time.
- Remove and cool.
- Add grated cheese and seasoning and beaten yolk of eggs.
- Whip the egg white very stiff and fold into the mixture.
- Pour into a greased souffle mould and bake in a hot oven at 250 degrees centigrade for 15-20 mins
