
Ingredients:
• 1 kg – mutton, cut into serving portions
• 250 g – Onions
• 6 flakes – Garlic
• 1″ piece – Ginger
• 250 g – carrots, sliced
• a few sprigs Coriander leaves
• 1 tsp – Turmeric powder
• 4 – Cloves
• salt to taste
• 3 – medium tomatoes, blanched and sliced
• salt and chilli powder to taste
• 1 tsp – coriander powder
Method:
- Grind onions, ginger and garlic to a paste.
- Heat 4 tbsps. ghee and fry the onion paste to a golden colour.
- Put in the mutton and fry to a rich red colour.
- Add all the spices with the exception of garam masala and cloves.
- Mix well, put in the tomatoes and salt. Cook till dry. Cover mutton with hot water and cook till almost done.
- Put in the carrots and continue cooking till the mutton and carrots are cooked. Remove from fire and set aside.
- Heat 1 tbsp oil and fry the cloves in it and put over the mutton.
- Sprinkle garam masala and coriander leaves on top before serving.
