Ingredients:

• 1 bunch – arai keerai/greens
• 10 – small Onions
• 10 – Garlic Cloves
• 2 – Tomatoes
• 5-6 – Green chillies
• 1/2 tsp – Turmeric powder
• 1/2 tsp – Asafoetida
• 1 tsp – mustard and Urad Dal
• Lemon sized Tamarind (2 cups of Tamarind extract)
• Salt to taste
• 1 tsp – oil

Method:

  1. Wash and chop the leaves. Boil the leaves in water for 5 mins.
  2. Heat oil in a pan. Add mustard and urad dal.
  3. When they stop spluttering, add the chopped onions, chillies, tomatoes, garlic and saute them well.
  4. Now, add the cooked leaves (boiled arai keerai) along with the tamarind extract with a pinch of turmeric powder, asafoetida and salt.
  5. Allow it to boil for about 10-15 mins.
  6. Healthy keerai charu is ready to eat.
