
Ingredients:
• ?kg – Cauliflower
• ?kg – Carrots
• 100 g – small whole lady fingers
• 125 g – Mango masala
• 10 to 12 Green chillies
• 10 to 12 pieces Ginger
• 12 flakes Garlic
• ?tsp – Turmeric powder
• 2.5 cups – water
• ?cup – Sugar
• 1 tsp – Acetic acid
• salt to taste
Method:
- Chop the cauliflower and carrots into small equal portions.
- Leave the chillies and ladies fingers as whole.
- The ginger should be cut lengthwise.
- Peel the garlic flakes but do not shred them.
- Take a big vessel.
- Mix together all the vegetables with sufficient salt and turmeric powder.
- Put in the mango masala. Mix well.
- Heat the water and dissolve the sugar.
- Let it cool till it is lukewarm.
- Add this water to the mixed vegetables.
- Put in a teaspoon of acetic acid. Mix well.
- Keep this put for 3 hours then store in a glass container.
