Ingredients:

• 2 cups – packed Brown sugar
• 1 cup – mashed Banana
• 2 – Egg
• 1 tsp – vanilla extract
• 2 tbsp – vegetable oil (optional)
• 3 cups – all purpose flour
• 2 tsp – baking soda
• 1 tsp – salt
• 1.5 tsp – ground Cinnamon
• 1/2 tsp – ground allspice
• 1 tbsp – ground Cardamom
• 1/2 tsp – ground Clove
• 2 cups – dark beer
• 1.5 cups – Walnut (chopped)
• 2 tbsp – all purpose flour
• 2 cups – Dates (pitted and chopped)
• 2 tbsp – fresh Ginger root (minced)

Method:

  1. Preheat an oven to 175 degrees Celsius.
  2. Lightly grease two 9 by 5 inch loaf pans.
  3. In a large bowl, cream the brown sugar, banana, eggs and vanilla extract.
  4. For a moister bread, add oil.
  5. In a separate bowl, sift together 3 cups of flour, baking soda, salt, cinnamon, allspice, cardamom and cloves.
  6. Blend the flour mixture and beer into the creamed mixture.
  7. Add the walnuts and remaining 2 tbsp of flour.
  8. Stir in the dates and ginger and blend the mixture well.
  9. Pour into the greased loaf pans.
  10. Bake at 175 degrees for an hour or until a toothpick inserted into the preparation emerges dry and clean.
