Ingredients:

• 4 eggs
• 1 onion, finely chopped
• 1 tbsp – cooked Green peas
• 1 green chilli, finely chopped
• 1 capsicum, finely chopped
• 2 tbsp – chopped Coriander leaves
• 1/2 tsp – chilli powder
• 1/4 tsp – pepper
• salt to taste

Method:

  1. Heat the oil in a frying pan and fry the onion, green chilli, capsicum and coriander leaves for 5 mins.
  2. Add the chilli powder and pepper and fry for 1 min. more. Then add the green peas.
  3. Fry for another 5 mins. Beat the eggs well together and add salt.
  4. Pour this mixture over the vegetables.
  5. Cook until the omelette is set.
  6. Remove the pan under a hot grill and lightly brown on top.
  7. Serve immediately.
