
Ingredients:
• 1 kg – Brinjals sliced
• 3 – 4 large Onions sliced
• 1/2 inch – Ginger minced, fresh or powder
• 3 – chillies minced
• Vinegar to taste
• Salt to taste
• 1 cup – thick Coconut Milk
Method:
- Marinate the sliced brinjals with any masala for 1/2 hour
- Shallow fry and keep aside
- Mix minced items, add vinegar and salt
- Layer brinjals, minced mix and sliced onion
- Lastly add coconut milk
- Can be eaten either hot or cold
