Ingredients:
• Maida – 2 cups
• Salt – 1/2 tsp
• Sodium bicarbonate – 1.5 tsp
• Orange essence – 1 tsp
• Cinnamon powder – 1/2 tsp
• Raisins – 3 tbsp
• Soft Jaggery – 1/2 cup
• Milk – 300 ml
• Sugar – 1/2 cup
• Butter – 1/2 cup
• Chopped nuts – 3 tbsp
Method:
- Mix together maida, cinnamon powder and salt. Stir in the raisins and half the nuts.
- Dissolve jaggery in milk and strain.
- Sprinkle 1 tbsp of water on sugar and place on a low flame till it is caramelized.
- Add 4 tbsp of hot water to it and make thick syrup.
- Add 4 tbsp of this syrup to the milk and liquid jaggery.
- Add butter and essence to it and heat gently till the butter is melted.
- Cool and add to the flour mixture.
- Lastly, mix soda with 1 tbsp of boiling hot water and add it to the batter.
- Pour in a greased pan and sprinkle remaining chopped nuts on top.
- Bake in a moderate oven (160 C ) till done or for about 35 to 40 minutes.
