
Ingredients:
• 410 g – white fish
• 200 g – Butter
• 1.25 cup – fresh breadcrumbs
• 1 – medium size onion, grated
• 3/4th cup – grated cheddar cheese
• Two and half tbsps – chopped Coriander leaves
• 1 tsp – chopped Mint leaves
• 1.25 cup – boiled and mashed Potato
• 1 egg, lightly beaten
• 1.25 tbsps – Lemon juice
• 1 tbsp – walnuts, toasted and finely chopped
• salt and freshly ground pepper to taste
• For the Lemon Sauce:
• 1/2 cup – Cream
• 2.5 tsp – grinded Lime rind
• 2.5 tbsps – Lemon juice
• 20 g – Butter chopped
• 1 tsp – fresh chives, chopped
Method:
- For Lemon Sauce:
- In a microwave-safe bowl, combine the cream, lime rind and lime juice and heat on medium flame for 2 mins, stirring in between after 1 min.
- For Patties:
- Stir in the butter, cube by cube, stirring and mixing well after you put each cube.
- Skin and de-bone the fish. Crumble with a fork.
- Take a shallow microwave- safe dish and melt the butter on HIGH for 1/2 a min.
- Add the breadcrumbs stir and cook on high flame for 5 mins. or until the crumbs are golden brown in colour, stirring in between while it turns golden. Leave it to cool.
- In a bowl, combine the fish, onion, cheese, coriander, mint, potato, egg, lemon juice, chopped walnuts, salt and black pepper to taste. Mix well.
- Divide into small, equal portions. Shape them into patties. Roll the fish patties in breadcrumbs and place around the outer edge of a shallow microwave dish. Cook on high flame for 2 mins.
- Gently turn the patties and cook the other side for another 2 mins on the same flame. Serve with lemon sauce. Garnish with chives.
