Ingredients:

• 2 cups – Rice flour
• 1 cup – black gram dal flour
• 1/2 cup – Cilantro
• 6 – Green chillies
• 1/2 cup – Mint
• 1 – bunch Spinach
• 2- Onions
• salt
• oil

Method:

  1. Prepare dosa batter by mixing the rice flour, black gram dal flour and salt with some water. The consistency of the batter should be like for thick pancake batter. Keep it aside for 1 hour to rise.
  2. Chop the spinach, onions, green chillies, mint leaves and cilantro.
  3. Heat some oil in a separate pan and season with cumin seeds.
  4. Add onions, green chillies and fry till onions turn light brown.
  5. Add the spinach leaves, mint and cilantro leaves.
  6. Add salt to taste and close with a lid till the leaves are soft and just cooked.
  7. Remove from heat and allow it to cool.
  8. After it cools, put the fried leaves and onion in a mixie. Pulse it so that it does not become a paste.
  9. Now heat a pan and smear some oil.
  10. Make a thin dosa with the batter and cook, covered, for 15 seconds.
  11. Remove the lid and spread a spoonful of the ground herbal mix over the pancake.
  12. Close with the lid again for another 15 to 20 seconds.
  13. The heat should be set at medium level. When the pancake is cooked, roll it and remove.
  14. Serve with curd or raita or coconut sauce.
