Ingredients:
• Cucumbers – 2 medium size
• Peanuts – 100gm (roasted, peeled and ground)
• Green chillies – 1-2
• Cumin seeds – 1 Tsp
• Coriander leaves – as required
• Fresh grated Coconut – 3-4 Tbsp (or as required)
• Ghee – 1 tbsp
• Salt to taste
Method:
- Peel and grate the cucumbers (if the cucumbers have large seeds, scrape off the seeds before grating).
- Sqeeze the grated cucumber to remove water.
- Discard the water.
- Add the ground peanut and salt to the cucumber and mix well.
- Heat ghee in a small pan.
- Add cumin seeds and allow to splutter.
- Then add chillies. Pour it over the cucumber and mix.
- While serving garnish it with coriander leaves and fresh grated coconut.
