Ingredients:

• 250 g – Broccoli (cut into pieces)
• 3 cups – Chicken stock (or water and 1 Chicken stock cube)
• 1 – small Onion (chopped)
• 1 – Clove of Garlic (optional)
• 2 tbsp – oil
• 1/2 cup – low fat Milk
• Salt and pepper

Method:

  1. Heat oil. Saute onion and garlic, add chopped broccoli, chicken stock or water and crumbled stock cubes.
  2. Cook till it is tender.
  3. Remove from the heat.
  4. Liquidise in a blender, add salt and pepper.
  5. Heat the soup, add milk and serve with melba toast.
