
Ingredients:
• 100 g – plain biscuits such as Marie biscuits
• 50 g – Butter
• 500 g – cottage cheese/low-fat Cream cheese
• 1 cup – Milk
• 200 g – Sugar
• 3 eggs
• 1 tbsp – Lemon rind
• 2 tbsp – Lemon juice
Method:
- Melt the butter in a saucepan.
- Crush the biscuits with a rolling pin or in a blender till they are of the consistency of fine breadcrumbs. Then, mix them well with the melted butter.
- Now transfer this mixture to a non-stick cake tin with a removable base.
- Press down well to form the base.
- Blend the cottage cheese/cream cheese, milk and sugar together till smooth.
- Add the eggs, lemon rind and lemon juice and blend till smooth.
- Pour the mixture over the biscuit base.
- Bake in a preheated oven for 35 to 40 minutes till the top is firm to touch.
- Cool and then turn out on to plate.
