Ingredients:
• Basmati Rice 2 cups
• Potato 3 to 4
• Onion – 2 big size
• Salt – according to taste
• For vaghere
• Ghee 2 tsp
• Cumin seeds – 1 tsp
• Turmeric powder – 1 tsp
• For Masala:
• Mint leaves – 1 Bunch
• Green chillies – 4 to 5
• Garlic – 1-2 Cloves
• Ginger – a small piece
• Grated Coconut – 1/2 cup
Method:
- First, keep the rice to be cooked.
- Chop potatoes into big chunks and the onion very finely.
- Take a kadai and add ghee. When the ghee is hot, add cumin seeds in it.
- Fry it for some time and the add turmeric powder to it.
- Then add to it the onion pieces and fry it till it becomes transparent.
- Add potatoes and salt and let it cook.
- Cut green chillies, garlic, ginger and mint leaves. Add grated coconut to it and grind it.
- Add this paste to the potato.
- After potato and rice are cooked, add the potato gravy to the rice and mix it slowly.
- Serve it when it is hot.
