Ingredients:

• Basmati Rice 2 cups
• Potato 3 to 4
• Onion – 2 big size
• Salt – according to taste
• For vaghere
• Ghee 2 tsp
• Cumin seeds – 1 tsp
• Turmeric powder – 1 tsp
• For Masala:
• Mint leaves – 1 Bunch
• Green chillies – 4 to 5
• Garlic – 1-2 Cloves
• Ginger – a small piece
• Grated Coconut – 1/2 cup

Method:

  1. First, keep the rice to be cooked.
  2. Chop potatoes into big chunks and the onion very finely.
  3. Take a kadai and add ghee. When the ghee is hot, add cumin seeds in it.
  4. Fry it for some time and the add turmeric powder to it.
  5. Then add to it the onion pieces and fry it till it becomes transparent.
  6. Add potatoes and salt and let it cook.
  7. Cut green chillies, garlic, ginger and mint leaves. Add grated coconut to it and grind it.
  8. Add this paste to the potato.
  9. After potato and rice are cooked, add the potato gravy to the rice and mix it slowly.
  10. Serve it when it is hot.
