Ingredients:

• 3/4 cup – chopped long beans (phali)
• 2 -diced Potatoes
• 2- Tomatoes chopped
• 2- Onion chopped
• 2 heaped tsp – coriander powder
• 1 tsp -chilli powder
• 1/2 tsp – Turmeric powder
• salt to taste
• 2 tbsp – oil

Method:

  1. Heat oil in a pan.
  2. Saute the onions till golden brown.
  3. Add the tomatoes, followed by coriander powder, chilli powder and turmeric powder and fry till the tomatoes turns mushy and oil separates.
  4. Add the potatoes and long beans with salt. Stir well.
  5. Cover and cook on low flame till the vegetables are cooked through. Serve with rice or roti.
