
Ingredients:
• 1/4 kg – Spinach
• 2 onions, chopped finely
• 4 hard-boiled eggs, peeled
• 1 egg, beaten
• 1 cup – breadcrumbs
• 1 tbsp – seasoned flour
• Oil for frying
• Salt and pepper to taste
Method:
- Chop spinach finely and cook in enough water till tender.
- Heat 1 tbsp – oil and fry the onions till golden brown.
- Season with salt and pepper.
- Add spinach puree. Cook till thick.
- Roll the eggs in seasoned flour, coat with beaten egg and breadcrumbs.
- Fry in hot oil until golden brown in colour.
- Cut each egg into four.
- Serve the spinach mixture, garnished with egg-quarters.
