Ingredients:

• 1 cup – plain flour
• 2/3 cup – Sugar
• 1 cup – rolled oats
• 1 cup – desiccated Coconut
• 125g – unsalted Butter
• 1/4 cup – golden syrup or Honey or treacle
• 1/2 tsp – bicarbonate of soda (cooking soda)
• 1 tbsp – boiling water

Method:

  1. Preheat oven to moderate heat at 180 degrees. Line a 32 x 28 cm biscuit tray/baking tray with baking paper.
  2. Sift flour and sugar into a large mixing bowl. Add oats and coconut and make a well in the centre.
  3. Combine butter and golden syrup in a small pan. Stir it over low heat until the butter has melted and mixture is smooth. Remove it from heat.
  4. Dissolve soda in boiling water. Add it to the butter mixture. It will foam up instantly.
  5. Add butter mixture to the dry ingredients. Using a wooden spoon, stir it until it is well combined.
  6. Drop one tbsp of mixture at a time onto prepared tray. Flatten it gently with fingers. Bake for 20 minutes or until it turns brown in colour.
  7. Remove it from oven and transfer it to a wire rack and let it cool down. Store biscuits in an airtight container.
