
Ingredients:
• 1 cup – plain flour
• 2/3 cup – Sugar
• 1 cup – rolled oats
• 1 cup – desiccated Coconut
• 125g – unsalted Butter
• 1/4 cup – golden syrup or Honey or treacle
• 1/2 tsp – bicarbonate of soda (cooking soda)
• 1 tbsp – boiling water
Method:
- Preheat oven to moderate heat at 180 degrees. Line a 32 x 28 cm biscuit tray/baking tray with baking paper.
- Sift flour and sugar into a large mixing bowl. Add oats and coconut and make a well in the centre.
- Combine butter and golden syrup in a small pan. Stir it over low heat until the butter has melted and mixture is smooth. Remove it from heat.
- Dissolve soda in boiling water. Add it to the butter mixture. It will foam up instantly.
- Add butter mixture to the dry ingredients. Using a wooden spoon, stir it until it is well combined.
- Drop one tbsp of mixture at a time onto prepared tray. Flatten it gently with fingers. Bake for 20 minutes or until it turns brown in colour.
- Remove it from oven and transfer it to a wire rack and let it cool down. Store biscuits in an airtight container.
